Crop Rotation We aim to harvest at least three crops per year from every square foot of the cold houses—two in winter and one (or more) in summer. A typical rotation in one of the 48-foot cold houses might include a winter-harvested carrot crop followed on March 15 by planting the first of the baby new potatoes. After harvesting the potatoes, we would transplant a summer crop of Charantais melons in late May. After we cleared the melons the house would be planted to a fall-harvested spinach crop.

Timing the plantings is the key to success. The goal is to get plants almost to maturity before the day length becomes shorter than ten hours. A second advantage of the mobile greenhouse is the avoidance of the buildup of pests, diseases, and excess soil nutrients, which can be problems in a permanent greenhouse. For one year out of every two, our growing beds are uncovered, exposing the soil to the cleansing powers of sun, rain, wind, and snow. As an additional advantage during the initial soil-building years, the uncovered year allows us to plant a long-term, deep-rooting, leguminous green-manure crop on that section.

Crops not protected with cold frames were protected by 18-inch-diameter glass bell jars called cloches set close together in tidy rows. The maraichers used cloches for everything from starting transplant seedlings through protecting five mature heads of lettuce under each cloche up to harvest. Since each cloche had to be individually vented on sunny days (a small notched stick was used to prop up one edge) and since some growers had up to three thousand cloches, one can imagine the almost unbelievable amount of hand labor and attention to detail required.
